Low-Carb Zucchini Pasta Recipe for Weight Loss

If you can’t go a day without eating a delicious bowl of pasta but are trying your best to lose weight, swapping regular pasta for zucchini pasta might be exactly what you need.

Low-Carb Zucchini Pasta Recipe for Weight Loss

There are two ways you can make zucchini noodles, with a vegetable peeler and a knife, or a spiralizer unit.

Don’t worry, I’ll go over both methods.

Ingredients:

  • 2 Peeled zucchinis
  • 1 tbsp olive oil
  • 1/4 cup water
  • salt and pepper to taste

Instructions for vegetable peeler and knife:

  1. Wash the zucchini and cut off the ends.
  2. Using a vegetable peeler, cut lengthwise slices of zucchini until you reach the seeds.
  3. Turn the zucchini over and continue peeling.
  4. Keep turning and peeling the zucchini until it’s all in long strips.
  5. Using a knife, slice the zucchini into thinner strips to make it look like pasta.
  6. Add the olive oil to a skillet and heat over medium heat.
  7. Once the oil is hot, add the zucchini and cook for 1 minute.
  8. Add water and cook for 5-7 minutes until zucchini is softened.
  9. Add salt and pepper to taste.

Instructions for spiralizer

  1. Wash the zucchini and cut off the ends.
  2. Place the zucchini in the spiralizer unit and select the cut size.
  3. Cut the zucchini
  4. Continue with steps 6-9 above.
